Temperature:  80-110°C, optimum 95-105°C
pH:  5.5-9.0, optimum 5.8-7.0
Liquor ratio:  1:1
Dosage:  1-3 g/L (dilution with 8~15% Conzyme HTAA25L)
Time:  5-20 minutes
 
Definition of unit
 1 unit of High-Temperature Alpha-Amylase equals to the amount of enzyme which liquefies 1mg of soluble starch to dextrin at 70°C and pH6.0 in 1 min.

Storage
Should be stored in a dry place with temperature between 5-35°C.

Shelf life
6-9months, subject to storage condition.
